My sweet mama just came to visit me from Katy and we had so so much fun. She stole a few days away from my pops so we could have some girl time. We went to the natural gardener and got some herbs and flowers, did some thrift store shopping and had some great meals.
My mom got in late Monday night, so I thought I’d cook us some dinner and we could hang out with a glass of wine at home. Thinking of something I haven’t cooked in a while I decided to make seared pork chops with sweet mashed potatoes and a salad.
My family is so close and I always love when we can all get together, but when it’s just my mom and me it feels like we are just two girlfriends hanging out. I love it!
These pork chops were yummy and quick so once my mom arrived we were able to eat soon after and get to the girl gab.
Ingredients: serves 2
2 pork chop cutlets
1 garlic clove
1 Tbsp finely chopped rosemary
3 Tbsp unsalted butter- divided
2 sweet potatoes
1/4 cup milk
Recipe:
Start by boiling about 4 cups of water. Peel and dice the sweet potatoes and boil for about 15 minutes until the potatoes are fork tender. Once the potatoes are fork tender mash them up- put them through a ricer, push them through a mesh strainer or use a hand mixer. Fold in about 1 1/2 tbsp unsalted butter and the milk. Add S&P to taste.
In the meantime, season each cutlet with S&P, rosemary and garlic. Heat remaining butter in a sauté pan. Over medium heat sear the cutlet on each side for about 3 minutes. You don’t want to overcook them or they will get really tough and chewy.
Serve with a small side salad and a glass of yummy vino!
I had so much fun with my mom and can’t wait for her to come back and visit- maybe next time she’ll even bring my dad and sister 🙂
I can’t say I’ve ever made bone-in chops. I am always nervous to try…thinking I’ll mess it up. This recipe looks so simple so I going to give it a try! Thanks cowgirl!… Or should I say porkgirl 🙂
