Light the barbeque crack open a beer invite some friends over make some margs and grill some burgers.
What’s that you say? Those aren’t the lyrics.
Well I need to copy-write these because mine are better.

When I think of summer I think of friends and family on the water, I think of day drinkin’ some brews; and I think of grilling.
These burgers will make the biggest beef lovin’ man come crawling back for more. Trust me, I tested them out on my pops.
Trust me on this one my friends, you won’t even miss the beef patty here.
But if I haven’t convinced you yet, there is bacon in the patty.
Ok, I’m glad you’re now on board.
Ingredients: makes 4 burgers
6 boneless skinless chicken thighs, chopped into bite size pieces
1/2 jalapeño, seeded and diced
1/2 cup cilantro
2 slices uncooked bacon, chopped
1 tablespoon Lawry’s fire roasted chile and garlic spice mix
2 tablespoons olive oil
1 large yellow onion
1 tablespoon butter
4 hamburger buns of your choice (you could also make ’em lean and mean by wrapping them in lettuce)
Recipe:
Add all of the ingredients to a food processor; pulse just until ground. It will form a ball when it’s ready; don’t over process! Form balls into four patties. Cook immediately or cover with plastic on a pan and keep in the fridge until you’re ready.
Meanwhile slice the onions and add them with 1 tablespoon to a hot cast iron skillet. Cook down about 10 minutes. Add a splash of water to prevent drying out then cook another 20 minutes or so.
Grill over medium-high heat, turning only once when the first side is well browned. 9 minutes on the first side and 7 minutes once flipped.
Place on toasted buns and top with the caramelized onions.
