Let’s talk for a second about Nashville, have you been watching this TV show? I LOVE it! The music, the drama I think it is fantastic. Some of you may know that I moved to Austin last year from music city and it still holds a very special place in my heart. While I lived there I was immersed in the music scene and loved every minute of it. So watching the show always takes me back- I even know some of the songwriters on the show which is fun (Check out Sarah Buxton, Heather Morgan and Kate York if you get a chance.) Anyways, if you haven’t been watching Nashville I highly recommend it!
Last night I made some yummy pizzas for my roommate and I to enjoy while watching Nashville. This flatbread topped with sweet caramelized onion, creamy goat cheese and peppery arugula is perfect sliced as an appetizer or as a full dinner.
I used this naan bread recipe as my pizza dough and then I was off to the races.
Caramelized onions make everything better don’t they? Steak, tacos- they are such a gem of flavor.
Blasting some music and dancing around my kitchen may have also been going on during this time. Dance like no one is watching, right?
One for yours truly and one for my roomie- into the oven they go!
Ingredients: for 2-4 pizzas
2 yellow onions sliced
1/4 cup unsalted butter
4-8 oz goat cheese (used to your preference)
3 cups arugula
Juice of 1 lemon
1 1/2 Tbsp olive oil
S&P to taste
Recipe:
Start by making the naan bread. As the naan rests slice the onions and get them going in the butter over medium low heat in a sauté pan. The onions will slightly simmer and cook down for about 30 minutes.
Once the naan is done, rolled out and seared top each with pizza ingredients- goat cheese and then onions. Bake at 350 degrees for about 8-10 minutes or until the cheese has melted. While the pizzas are in the oven mix the arugula with lemon juice, olive oil and a pinch of S&P.
Once the pizzas are done in the oven, top with arugula. Then pour yourself a glass of wine and enjoy!
